Assistant settings, device settings, and sound settings apply to the stereo pair and can't be changed on individual speakers. Yes you can control all your devices, smart plugs etc with Sonos. You may need to enter the password for your Wi-Fi network. Make sure the mobile device you’re using connected to your Wi-Fi network, too.
It appears as a miscellaneous speaker which, unfortunately, means you can’t control volume or tracks playing on the Roam within the Home app’s excellent “Media” section. The Sonos too can be used to control all your Google Home devices like smart plugs, lights, etc because of their compatibility with Google Assistant. But regardless of all these positives, you’ve seen that the Sonos speakers cannot be grouped Google Home.

However, recently Sonos has created a line of its speakers that work with Google Assistant to allow you to use the voice assistant to use your speakers. You can also play music from the following services, though they aren't listed in the Google Assistant app. Make sure the music services you added in Google Assistant have been added in the Sonos app. Google Assistant detects your Sonos One or Beam, requests permission to access and control it, asks what room it's in, and adds the music services you want to use. Once your system is set up, you may notice that you can no longer easily control the volume of your Google Home device. When you ask it to change volume (“Ok Google, set volume to 6”), your Google Home speaker will default to changing the volume on its default speaker, the Sonos system.
